Garlic Powder Ginger Powder Green Chilli Powder Lemon Powder

Vada Pav

Serving – 6 Vada Pav

Time Required - 45 minutes

Ingredients:

  • Dry Coconut Chutney
    • 1 teaspoon oil
    • 1 tablespoon peanuts
    • 1 tablespoon sesame seeds
    • 1 teaspoon coriander seeds
    • 1 teaspoon cumin
    • 1/4 teaspoon methi (fenugreek)
    • 1/4 cup dry grated coconut
    • 1/8 cup Zilli's Garlic Powder
    • 1/4 teaspoon turmeric powder
    • 1 teaspoon amchur (dry mango) powder
    • 1/2 teaspoon salt
    • a pinch of hing
    • 1  tablespoon red chilli powder
    • Vada preperation
      • 2 teaspoon oil
      • 1/2 teaspoon mustard seeds
      • a pinch of hing
      • 10-12 curry leaves
      • 1/4 teaspoon turmeric powder
      • 2 boiled and mashed potatoes
      • 1/8 cup coriander leaves
      • 1/2 teaspoon Zilli's Ginger Powder 
      • 1/4 teaspoon Zilli's Garlic Powder
      • 1/2 teaspoon  Zilli's Green Chilli Powder
      • salt as per taste
      • 1/4 teaspoon Zilli's Lemon Powder
      • 3/4 cup besan
      • 1 tablespoon rice flour
      • 1/4 teaspoon turmeric powder
      • 1/4 teaspoon red chilli powder
      • 1/4 teaspoon baking soda
      • 3/4 cup water
      • 4-5 green chillies

    Method:

    • Dry Coconut Chutney
      • Heat the pan and add 1 tbsp oil.
      • Add peanuts. Saute till it turn light brown.
      • Add sesame seeds and cook on a closed lid for a minute.
      • Add coriander seeds, cumin, and methi.
      • Saute & close the lid to cook for 2 minutes on medium flame.
      • Open the lid add grated coconut and garlic powder.
      • Keep mixing till coconut turns light brown on low flame.
      • Keep the mixture aside for 20 minutes.
      • Transfer the mixture to jar, add turmeric powder, amchur powder, salt, hing, and red chilli powder. 
      • Coarsely blend the mixture.
      • Dry coconut chutney is ready.
    • Green Chutney
      • Take a jar, add all the ingredients. 
      • Blend it smoothly. 
      • Green Chutney is ready
    • Vada Preperation
      • Heat 2 tsp oil in a pan,
      • Add mustard seeds, hing and curry leaves. Saute a little.
      • Add turmeric powder. Saute it.
      • Add potatoes and saute well.
      • Add coriander leaves, ginger powder, garlic powder and green chilli powder.Mix well on medium flame.
      • Add salt and mix well.
      • Add lemon powder and little water. Mix well.
      • Make potato balls and keep aside.
      • Take a bowl, add besan, rice flour, turmeric powder, red chilli powder, salt, hing, 1/4 tsp baking soda and 1/2 cup water. Whisk well.
      • If you feel that the besan batter is not smooth then add 1/4 cup water.
      • Whisk well to get the desired consistency.
      • Take a potato ball and dip in besan and coat well.
      • Fry it on hot oil and stir occasionally. 
      • Once the vadas had turned brown then transfer in a plate. 
      • Add green chillies to hot oil and let it turn light brown. Transfer them in a plate.
    • Vada Pav Assembly
      • Slit the pav.
      • Add 1 teaspoon green chutney and 1/2 teaspoon dry coconut chutney.
      • Place the prepared vada and a fried green chilli. 
      • Your vada pav is ready to be served.
