6 Types of Golgappe ka pani aur masala

 

Serving – 3 persons

Time Required - 30 minutes

Ingredients:

    • Tamarind Water (Imli ka pani)
      • half of the base paste
      • 2 tablespoon Zilli's Tamarind Powder
      • 1 teaspoon black salt
      • 1 teaspoon cumin powder
      • 1 teaspoon chaat masala
      • 1/4 teaspoon black salt
      • 2 teaspoon sugar
      • 1 teaspoon Zilli's Lemon Powder
      • 4 cups or 1 liter cold water
    • Sweet Water (Meetha pani)
      • 1 cup tamarind water
      • 3 teaspoon sugar
    • Fennel Water (Sauf ka pani)
      • 1 cup tamarind water
      • 1 teaspoon fennel powder
    • Base Mixture
      • 1/2 teaspoon black salt
      • 1/4 teaspoon roasted cumin powder
      • 3/4 teaspoon chaat masala
      • a pinch of black pepper
      • 1 teaspoon sugar
      • 1/2 teaspoon Zilli's Lemon Powder
    • Asafoetida Water (Hing ka pani)
      • 1.5 teaspoon base mixture
      • 1/2 teaspoon asafoetida
      • 1 cup or 250ml cold water
    • Garlic Water (Lahsun ka pani)
    • Raw mango Water (Kacche aam ka pani)
      • 1 raw mango
      • 1 teaspoon base paste
      • 1/2 teaspoon black salt
      • 1/4 teaspoon roasted cumin powder
      • 3/4 chaat masala
      • a pinch of black pepper
      • 2 cups or 500ml cold water
      • 1 teaspoon sugar (optional)
      • Golgappe ka masala 
        • 4 medium size boiled potatoes
        • 1/2 cup soaked and boiled red channa
        • 2 teaspoon base paste
        • salt to taste
        • 1/2 teaspoon black salt
        • 1/2 teaspoon roasted cumin powder
        • 1 teaspoon chaat masala
        • 1/4 teaspoon black pepper
        • 1 teaspoon Zilli's Lemon Powder
      • Garnishing
        • finely chopped onions
        • finely chopped coriander leaves
        • 10 golgappe
        • few masala bondi

      Method:

      • Base paste
        • Add all the ingredients in a blender. Blend it.
        • Base paste is ready.
      • Tamarind water
        • Add all the ingredients and mix well.
        • Tamarind water is ready.
      • Sweet water
        • Add all the ingredients and mix well.
        • Sweet water is ready.
      • Fennel water
        • Add all the ingredients and mix well.
        • Fenugreek water is ready.
      • Base mixture
        • Add all the ingredients and mix well.
        • Base mixture is ready.
      • Asafoetida Water
        • Add all the ingredients and mix well.
        • Asafetida water is ready.
      • Garlic water
        • Add all the ingredients and mix well.
        • Garlic Water is ready.
        • Raw mango water
          • Boil 1 medium size mango.
          • Remove the skin and seed.
          • Add pulp to a blender and make it.
          • Take the raw mango pure and add rest of the ingredients.
          • Mix well.
          • Raw mango water is ready.
        • Golgappe ka masala
          • Boil 4 medium size potatoes
          • Soak red channa for 6 hours then boil them.
          • Take boiled potatoes and red channa in a bowl. Mash them.
          • Add rest of the ingredients ans mix well.
          • Golgappe Masala is ready.
          • Garnishing
            • Garnish the plate with golgappe, onion and coriander leaves.
            • Sprinkle few bondi on the waters.
            • Golgappe are ready to be served.
