In this healthy vegetable paratha recipe, a variety of vegetables and spices are cooked and stuffed inside a whole wheat dough and then roasted to golden-brown perfection. It is mildly spicy, hearty, and absolutely irresistible.

Here is how you can make this easy stuffed paratha recipe at home:

Ingredients:
- 2 cups of wheat flour.
- ½ tsp Zilli's Ginger Powder.
- 20 tsp ghee.
- 1 tsp cumin.
- ½ tsp hing (asafoetida).
- 5 tsp chopped cauliflower.
- 5 tsp chopped carrot.
- 5 tsp chopped cabbage.
- 5 tsp chopped beans.
- 6 tsp grated bottle guard.
- 2-3 finely chopped green chillies.
- ¼ tsp black salt.
- ¼ tsp black pepper powder.
- ½ tsp garam masala.
- Salt as per taste.
- Water.
How to Make Vegetable Stuffed Paratha:
Preparing the Paratha Dough:
- In a mixing bowl, add wheat flour, one tsp of ghee, some salt, and a little water.
- Combine all the ingredients together.
- Knead till it forms a smooth and soft dough and set it aside for 20 minutes.
Preparing the Vegetable Stuffing:
- Heat 3 tsp ghee in a pan. Add cumin seeds and hing, and let the cumin splutter.
- Next, add cauliflower, cabbage, carrot, beans, grated bottle guard, and green chillies. Sauté well.
- Add salt, black salt, pepper, ginger powder, and garam masala. Mix to combine.
- Cover with a lid and let the vegetables cook for 5 minutes over medium heat.
- Remove the lid and give it a quick mix. Cover again and continue cooking for five more minutes.
- Take off the lid and sauté for about 2-3 minutes on high heat until the vegetables are tender and there is no moisture left.
- Mix and mash the vegetables with a spoon or potato smasher on high flame.
- Turn off the flame and keep aside for 10 minutes to let the mixture cool down.
Making the Stuffed Parathas:
- Pinch out two equal medium-sized balls from the dough.
- Place the first dough ball on a rolling board. Flatten the dough ball, dust it with flour, and roll it into a chapati of the desired size. Repeat with the second ball.
- Take one chapati and place 2 tsp of the mixture. Flatten the stuffing and spread it evenly, leaving some space around the edges.
- Wet the edges slightly with some water.
- Place the second chapati over the filled one and seal the edges by pressing gently with your fingers.
- Flatten the stuffed paratha and roll it slightly with the rolling pin.
Cooking the Parathas:
- Heat a tava over medium flame.
- Place the vegetable paratha on the tava and cook for 30 to 40 seconds.
- When the base is partially cooked, flip the paratha with a spatula and spread 1½ tsp ghee on the top.
- Flip again and cook the ghee-coated side for 30-40 seconds.
- Apply 1½ ghee on the remaining side.
- Cook the paratha on both sides by pressing it with a spatula, a spoon, or a presser. The parathas should turn golden brown on both sides.

Tips and Variations for Vegetable Stuffed Paratha Recipe:
Make sure to knead the dough until it is soft and smooth but pliable.
Cook the parathas on medium or medium-high heat. They can become hard or chewy if cooked on low heat.
Use mixed vegetables of your choice. Chop and grate them as finely as you can.
Cook the filling till it is dry. You can add chickpea or rice flour to absorb any excess moisture.
Seal the chapatis thoroughly after stuffing to avoid leaks.
