Serving – 2 person (5 parathas)
Time Required - 40 minutes
Ingredients:
- Wheat dough
- 1 tsp Zilli's Green Chilli Powder
- 1/2 tsp Zilli's Ginger Powder
- 20 tsp of ghee
- 1 tsp of cumin
- 1/2 tsp of hing
- 5 tsp chopped cauliflower
- 5 tsp chopped carrot
- 5 tsp chopped cabbage
- 5 tsp chopped beans
- 6 tsp grated bottle guard
- Salt as per taste.
- 1/4 tsp black salt
- 1/4 tsp black pepper powder
- 1/2 tsp garam masala
Method:
- Make wheat dough and keep it aside for 20 minutes.
- Take a pan and add 3 tsp of ghee.
- Add cumin and hing and let it temper.
- Add cauliflower, cabbage, carrot and beans.
- Add grated bottle guard. Saute well.
- Add salt, black salt, black pepper, green chilli powder and ginger powder. Mix well.
- Add garam masala. Mix well.
- Close the lid and cook for 5 minutes on medium flame.
- Open the lid and mix well.
- Close the lid and cook for 5 minutes on medium flame.
- Open the lid and cook for 3 minutes on heavy flame till water is dried.
- Keep mixing or pressing the the mixture while on high flame.
- Keep it aside and let it cool for 10 minutes.
- Take a rolling board and put ball size dough and keep pressing it with rolling pin to get desired size.
- Make 2 chappatis of similar size.
- Take one chappati and add 2 tsp of mixture. Flatten the mixture with the spoon.
- Take a dash of water and apply it on border of the paratha.
- Take another chappati, put it on another partially filled paratha.
- Press gently the border of the paratha.
- Gently flatten paratha using rolling pin.
- Take a tava and let it heat on medium flame.
- Apply the paratha on the tava. Let it heat for 30 - 40 seconds.
- Switch the surface and apply 1.5 tsp of ghee.
- Heat the other surface for 30 - 40 seconds.
- Apply 1.5 ghee on the surface.
- Keep pressing the paratha using rolling pin on both sides.
- Your apply vegetable stuffed paratha is ready to be served with curd and pickles.
